UBA RED Omni comes from Mame Coffee Roasters, sourced from Finca Milán in Pereira, Risaralda, Colombia, at 1,500 MASL — part of Café UBA, a pioneering producer group co-founded by third-generation farmer Julio Cesar Madrid. This Caturra lot undergoes a watermelon co-fermentation in a controlled anaerobic environment, where watermelon juice, starter cultures, and yeasts are introduced to the bioreactor alongside the coffee, infusing it with vivid, candy-like tropical character. The same coffee was used by Mame's Mathieu Theis to place 3rd at the 2024 World Barista Championship. Equally expressive as espresso or filter, it delivers a wildly fruit-forward cup with notes of watermelon, cantaloupe, and lychee.
