Pepe Jijón produced this Sidra at Finca Soledad in Imbabura, Ecuador. September describes it as its fifth harvest working with the award-winning producer.

The Rainbow Wave method combines controlled stages inspired by natural, honey, anaerobic and washed processing. The result is complex yet clean, with apricot, black tea, crisp red apple and a sparkling floral finish.
