Balbina Sabillon Parainema Washed comes from Proud Mary Coffee, grown by Balbina Sabillon at Finca Las Flores in Santa Barbara, Honduras, at 1,500–1,580 MASL. In 2018, Balbina became the first female producer Proud Mary worked with in Honduras — part of a growing community of producers around Lake Yojoa that the roaster has nurtured since 2012. A third-generation coffee farmer, Balbina works her modest farm alongside her two children, planting exclusively Parainema — a variety that thrives at low to medium altitudes and produces a uniquely sweet, rounded cup on her land. The result is an approachable, clean washed coffee with notes of caramel and orange.
