Colombia Zarza Pacamara comes from Lilo Coffee Roasters, grown by brothers Jhonathan and Johan Gasca at Finca Zarza in Bruselas, Huila, Colombia, at 1,650 MASL. Known for pushing processing boundaries without relying on infusion techniques, the Gasca brothers employ a meticulous multi-stage fermented washed process — combining aerobic and anaerobic fermentation with thermal shock — to coax extraordinary complexity from the Pacamara variety. The result is a playful, tropical cup bursting with juicy mandarin orange, peach, and passionfruit, with a silky, Yakult-like smoothness on the palate and a refreshing lemon candy finish that lingers long after the last sip.
