Elto's RF8 process ferments coffee cherries in sealed bags immersed in a river, then uses slow drying to preserve the aromatics developed during fermentation. Eliyas Dukamo and Atiklit Dejene apply this approach to a 74158 lot from their Ethiopian project.

Cherry provides a bright fruit sweetness, followed by the fragrance of dried rose. A bubblegum-like finish gives the cup a playful confectionery character. Tanat roasts this silky, lively coffee lightly for filter brewing.
