Datura Coffee - Lost Origin x Finca Santa Teresa Gesha - Panama - Depulped
Tasting notes: Kiwi, geranium, honeysuckle, white tea, jasmine
This Gesha brings together Finca Santa Teresa in Chiriquí, Panama, and the controlled processing work of Lost Origin. Grown at 1,500 metres and harvested on February 10, 2026, the coffee was selected by Datura during a visit to Panama. It stood out in a blind tasting that also included a naturally processed version from the same farm.
For this depulped lot, the fruit was removed before a two-day fermentation in custom stainless-steel tanks, at an average temperature of 22°C. Lost Origin used its defined culture of Pichia kluyveri yeast and Lactobacillus plantarum bacteria. The coffee then dried for 21 days in rooms with controlled temperature and humidity.
Datura describes an exceptionally floral, tea-like and juicy cup, with a clarity reminiscent of washed coffee. The tasting notes are kiwi, geranium, honeysuckle, white tea and jasmine. This is specifically the depulped expression, not the separate natural lot. It offers an opportunity to explore precise fermentation while retaining a delicate, transparent presentation of Gesha.
