Datura Coffee - Inmaculada Striking Terroir Gesha - Colombia - Natural (Nitrogen Flushed)
Tasting notes: Raisin, lavender, peach, strawberry, yuzu
Striking Terroir is a Gesha from Inmaculada’s main station in Pichindé, Valle del Cauca, Colombia, grown at 1,820 metres. Datura selected it after tasting the producer’s range with Juan and Jorge from Inmaculada. Its distinctive character comes from a documented fermentation protocol followed by an unusually extended, controlled drying stage.
The whole cherries fermented for 109 hours with nitrogen flushing at a temperature close to 21°C. A Saccharomyces cerevisiae yeast culture, initially grown in cascara, was introduced during fermentation. Afterward, the cherries spent a month drying in a dehumidifying room. Nitrogen flushing here refers to the processing of the coffee, rather than simply a packaging claim.
Datura describes a bright, fresh cup with pronounced malic acidity and expressive flavours that remain away from a boozy character. The tasting card lists raisin, lavender, peach, strawberry and yuzu. This combination makes Striking Terroir a distinctive selection for drinkers interested in controlled fermentation, pairing rich fruit notes with floral detail and a lively citrus dimension.
