Datura Coffee - Guji Shakisso Hadeso JARC Varieties / Local Landraces - Ethiopia - Natural
Tasting notes: Pineapple, blackberry, combava, apricot
Hadeso Natural is sourced from smallholder farms around Dambi Uddo in Ethiopia’s Guji Zone. Coffee grows up to 2,100 metres under native shade trees, alongside food crops on small family plots. Testi Coffee’s Hadeso station processes the cherries from this community, combining local landraces such as Kurume and Wolisho with JARC selections.
Only ripe cherries are selected, then sorted again at the station and separated by density. They dry whole on raised beds, beginning in thin layers that are gradually deepened as the fruit loses moisture. Frequent turning, shade during strong midday sun and covering at night help control drying. The process typically takes 15 to 18 days.
Datura identifies pineapple, blackberry, combava and apricot on its tasting card. The tropical and berry notes distinguish this natural from the station’s tea-like washed expression, while combava adds an aromatic citrus reference. This lot is especially useful for a side-by-side tasting with Hadeso Fully Washed, showing how two preparations reveal different aspects of the same origin.
