Datura Coffee - Guji Shakisso Hadeso JARC Varieties / Local Landraces - Ethiopia - Fully Washed
Tasting notes: Black tea, peach, honeysuckle, citrus
This fully washed Hadeso lot comes from farms around Dambi Uddo in Shakisso, Guji, Ethiopia, where coffee grows up to 2,100 metres. Roughly 500 smallholder farmers deliver cherries to Hadeso washing station, managed by Testi Coffee. The lot combines local landraces, largely Kurume and Wolisho, with JARC selections; the precise mix varies across the contributing farms.
Cherries are selectively picked, sorted and pulped within six to eight hours of harvest. The coffee then ferments in tanks for 36 to 48 hours with regular water changes. After thorough washing and grading in channels, the parchment dries under shade netting on raised beds for five to seven days, with turning and hand-sorting throughout.
Datura’s notes of black tea, peach, honeysuckle and citrus describe a floral, tea-led expression with stone-fruit detail. This is the fully washed Hadeso, separate from the natural version in the same shipment. Trying both offers a direct way to explore how processing changes the character of coffees from the same station and growing community.
