Starlight is Boo’s Colombian decaf, grown by smallholder farmers in Huila at 1,400–1,900 metres. This edition combines Castillo and Caturra, with washed processing followed by sugarcane ethyl acetate decaffeination carried out in Colombia.

The EA process uses a sugarcane-derived compound to extract caffeine from the green coffee. The beans are steamed, treated, rinsed and dried before roasting. For this lot, Boo focuses on keeping the coffee’s natural sweetness and gentle fruit character, rather than letting the decaffeination define the cup.

Almond-cookie and milk-chocolate notes create a comforting base, lifted by pear and a soft vanilla finish. Boo presents Starlight as an omni-roast for both espresso and filter. Try an espresso recipe of 18g in and 40g out in around 28 seconds, or a V60 using 15g of coffee with 230g of water at 88°C.
