Boo Coffee Roasters - Raro - Ethiopia - Washed
Tasting notes: Dried apricot, lemonade, berries, Earl Grey
Raro is a washed Ethiopian coffee from the Uraga district of Guji, processed at Raro Boda Wet Mill. Smallholder growers cultivate local Wolisho, Dega and Kurume varieties alongside JARC selections 74110 and 74112 at elevations from 1,900 to over 2,300 metres.
The mill works with SNAP Specialty Coffee, and Boo sources this lot through The Coffee Quest. After depulping, the coffee undergoes underwater fermentation for 48–72 hours, followed by washing, soaking and raised-bed drying. These steps bring definition to the cup while preserving its fragrant fruit and tea character.
Expect dried-apricot sweetness, lemonade-like brightness, berries and a floral Earl Grey finish. The light profile makes it a particularly appealing choice for pour-over brewing. Boo suggests 15g of coffee with 250g of water at 93°C; let the cup cool slightly to explore its changing citrus and floral notes.
