
The Barn - Konga
Tasting notes: Apricot Jam, Black Tea
This lot comes from Sede Washing Station in Konga, a village just south of Yirgacheffe. Around 400 smallholder farmers deliver freshly harvested cherries from traditional mixed-heirloom trees grown under natural shade at elevations approaching 1,900 metres. The cooler conditions slow cherry maturation and help concentrate the clarity and complexity for which Yirgacheffe coffees are known.
Cherries are delivered to Sede on the day of harvest, sorted to remove underripe fruit, rinsed, and dried on raised beds for eight to twenty-five days depending on the weather. The natural process produces an expressive espresso with apricot jam, peach, bergamot, candied lemon, and delicate florals. With milk, those bright fruit notes soften into silky chocolate and sweet black tea.
