Nestor Lasso Estate #1 comes from Tanat Coffee, produced by Nestor Lasso — a visionary third-generation farmer at Finca El Diviso in Bruselas, Huila, Colombia, internationally recognised for his innovative fermentation methods and relentless pursuit of excellence. After initial water sorting, the cherries are carefully inspected, sanitized, and undergo a 24-hour oxidation phase before being pulped. They then enter a controlled 72-hour anaerobic fermentation to enhance aromatic complexity, before being washed and sun-dried for ten days. Roasted for espresso, the result is a fruity, harmonious, and warm cup with notes of hazelnut, dried apricot, and peach — a coffee that perfectly embodies Nestor's mastery of the fermentation process.
