The Castro-Kahle family grows this Villa Sarchi at Volcán Azul in Poás, Costa Rica, around 1,650 metres above sea level. Subtext selected the lot for espresso, where its sweetness and fruit can sit alongside a rounded pastry-like finish.

The coffee undergoes anaerobic honey processing: controlled fermentation is followed by drying with mucilage on the seed. In the cup, red gummy and dried orange notes meet a shortbread sweetness, making an expressive espresso.
