Ayla Shantawene receives cherries from approximately 725 farming families in Ethiopia’s Sidamo region. Operated by Testi Coffee, the station carefully sorts incoming cherries and supports its surrounding communities through projects that include schools and local infrastructure. This natural lot brings together indigenous Ethiopian coffee varieties, whose diversity contributes to its layered fruit and floral character.
Spilt Milk develops this coffee to a light-medium roast for versatility across espresso and filter. Blackberry jam, lilac and a chocolate sweetness reminiscent of Cadbury Mini Eggs sit over a creamy, velvety body. It also works well with milk, which complements the berry and chocolate notes. The roaster’s starting recipes are 20g coffee to 340ml water for filter, or 19g in and 41g out in 32–36 seconds for espresso.
