Tasting notes: Key lime pie, lemon and grapefruit

Yilver Andrés Pajoy Ipia produced this washed Geisha at Finca El Arrayan in Alto Cañada, La Plata, Huila, Colombia. The lot placed fifth in the Western Copa de Oro competition.

The coffee was fermented in whole cherry for 36 hours, depulped, dry-fermented for another 36 hours, rinsed and dried on raised beds. It is bright and clean, with key-lime-pie sweetness and a long citrus finish.
