Senel Campos Valverde produces this Milenio lot at El Cola Roja in Costa Rica’s Brunca region. Exceptionally ripe cherries are dried slowly for 38 days under controlled greenhouse conditions. The result is a rich, expressive natural with jammy fruit, tropical sweetness and a lively acidity, roasted lightly to preserve its complexity.
