Rogue Wave Coffee - Soavinandriana - Madagascar - Washed

Tasting notes: Plum, Dark Chocolate, Papaya, Strawberry, Brown Sugar

This washed coffee comes from around 40 smallholder producers working with the Madagascar Coffee Company (MCC) in the Itasy region. Their farms sit at approximately 1,400 metres in volcanic loam, where locally adapted Red Bourbon, Yellow Bourbon, and some Catimor are grown on small plots alongside crops such as rice, maize, beans, cassava, avocado, citrus, and bananas. The small scale of these farms allows producers to carefully sort their cherries, while MCC provides transportation, processing, quality control, and support throughout the supply chain.

At MCC’s central mill in Soavinandriana, only ripe cherries are selected for processing. The coffee is dry-fermented in bags overnight, then depulped and fermented underwater for another 24 hours before being washed and dried on raised beds for 10–14 days. In the cup, this careful washed process produces a comfortable balance of fruit and sweetness, with flavours of ripe plum, papaya, and strawberry layered over dark chocolate and brown sugar. It’s an approachable introduction to Madagascar coffee, offering both familiar sweetness and distinctive fruit character.
