Dinkalem Ademe grows coffee in the village of Checho in Ethiopia’s Keffa region, at elevations of 1,800–2,000 metres. He has worked with the sourcing team since 2017, building a relationship around consistent quality and careful stewardship of his farm. His plans include gradually renewing older coffee trees and developing an outgrower programme that extends opportunities to neighbouring producers.
Zema, an Amharic word associated with melody and sacred song, names this naturally processed 2026 harvest of Ethiopian landrace varieties. Lemon, peach and white grape sit alongside honey sweetness and floral aromatics. Rogue Wave recommends resting the coffee for two to three weeks before brewing. Start with a 1:16–17 filter ratio at 94°C, or a 1:2.5–2.7 espresso ratio at 90°C in 26–30 seconds. This listing contains 340g of whole beans.
