Santa Helena comes from Prodigal Coffee, sourced from an 11-hectare family farm in Huila, Colombia. Working alongside partners InConexus — the same organization behind some of Huila's most celebrated specialty lots — Santa Helena continuously improves its farming practices across a diverse range of varieties including Chiroso, Pink Bourbon, Gesha, and Colombia. This Chiroso lot sees ripe cherries carefully selected, depulped, and fermented for 48 hours before being thoroughly washed and dried in parabolic driers for 20–25 days. The result is a super clean, remarkably deep cup with notes of red plum, orange, and raisin.
