Juan Pablo Zapata comes from Prodigal Coffee, grown by Juan Pablo Zapata alongside his brother Alex and their father at Finca La Mata de Guadua in Urrao, Antioquia, Colombia, at 2,100 MASL. Using the traditional "cochadas" method, ripe cherries are harvested and depulped the same day, then fermented for 5–6 days in concrete tanks with minimal water before drying in a marquesina for 10–15 days. The result is a complex yet beautifully clean filter coffee, with notes of peach, raspberry, and raisin.
