[Rested] Pink Bourbon Washed Finca El Calamar comes from producer Gildardo López Hoyos, grown in Paicol, Huila, Colombia, at 1,950–2,000 MASL. This washed lot undergoes a 30-hour whole-cherry fermentation followed by a 48-hour parchment fermentation, then dries for 20–25 days on raised beds. The result is a bright, herbaceous cup with citrus acidity, rosemary flower aromatics, and a cool, juniper-like finish — clean, high-toned, and aromatic throughout.
