Typica Anaerobic Washed Pillcocaja is a bright and aromatic Ecuadorian coffee produced by Ana Crespo at Pillcocaja Coffee in the Yunguilla Valley of Azuay, growing at 1,650–1,700 metres above sea level. Made from the classic Typica variety, this coffee offers a clean and vibrant profile with notes of green grape, pear, and geranium. The anaerobic washed process enhances the coffee’s aromatic intensity while maintaining clear separation between its fruity, floral, and acidic qualities. Green grape brings lively acidity, pear adds gentle sweetness, and geranium provides a distinctive floral character, creating a refined and expressive cup.
