Samuel Diego Bermudez produced this Pink Bourbon at Finca El Paraiso in Cauca, Colombia, at 1,960 metres. Hydrangea selected the coffee for its fruit-forward profile, creamy structure and clean finish.

The lot ferments for 48 hours as whole cherry, then for 36 hours after pulping with tropical yeast. A thermal-shock wash completes the process, preserving Peach Gokuri, rhubarb and sakura notes.
