
Hatch Coffee – El Paraiso Pink Bourbon Washed – Colombia

El Paraíso Pink Bourbon Washed is produced by Daniel Bermúdez and his family in Cauca, Colombia, at 1,930 metres. The family’s work combines microbiology research with closely controlled fermentation and thermal-shock processing. This 2025 harvest lot highlights Pink Bourbon through a floral, tea-like profile with raspberry and panela sweetness, and is recommended by Hatch for filter brewing.
Selected cherries are disinfected with ozone before depulping and 24–36 hours of anaerobic fermentation with Lactobacillus. A two-stage thermal wash follows: water at 48°C is followed by a cold shock at 4°C. The coffee then spends 30–40 hours in a controlled dehumidifier. These carefully defined stages are central to the lot’s preparation, preserving its delicate aromatic character and clean, expressive finish.
