This Geisha from the Choclo lot at Chevas Estate is grown by José Luis Chevas in El Salto, Boquete, at 1,600 metres. Selected cherries undergo two days of controlled ambient oxidation before slow drying in a climate-controlled dark room. Expect berry and mango flavours with brown-sugar sweetness, best explored through filter brewing.
