Nuevo Paraiso comes from small family farms in La Concordia, Chiapas, at 1,350–1,800 metres. This washed lot combines Caturra, Bourbon and Marsellesa. After roughly 40 hours of fermentation in concrete tanks, the coffee dries on patios and raised beds for 12–15 days. Lightly roasted for filter, it offers gentle florals, stewed pear sweetness and cocoa.
