Sebastián Ramírez is a fourth-generation coffee producer from Quindío, Colombia, and a specialist in advanced fermentation techniques. At Finca El Placer, he continues to experiment with processes such as co-fermentation and carbonic maceration, creating coffees that push the boundaries of traditional processing. This Castillo lot is handpicked at peak ripeness before undergoing an extended co-fermentation with wine yeast, dehydrated strawberries, and fruit glucose, followed by additional anaerobic fermentation with CO₂.
The result is an intensely sweet and expressive cup, led by cooked strawberry and grape candy flavours, with juicy peach and stone fruit notes throughout. A smooth milk chocolate finish adds richness and balance. The coffee is dried in two stages, first on shaded patios at a controlled 40°C for 20–25 days and then in GrainPro bags for a further 15 days, helping develop its distinctive fruit-forward character.
