Huver Castillo Gesha Floral comes from El Paseo, Huver Castillo’s family farm in Buesaco, Nariño, Colombia. Although Huver grew up in a family of coffee producers, he spent most of his adult life working as a math teacher before returning to coffee in 2015, following a sharp decline in global coffee prices. After years of experimentation, the Castillo family exported their first specialty coffee lots in 2018. Their transition from commodity coffee to specialty production, combined with a strong focus on quality and processing innovation, helped strengthen the family business. Today, Huver works alongside his father on the farm, which has been in their family for more than 20 years.

This Gesha is handpicked at peak ripeness before being placed whole-cherry into temperature-controlled vessels with brewer’s yeast musto. Once the musto develops, the cherries are de-pulped without water and transferred to sealed stainless-steel tanks for another 72 hours of anaerobic fermentation. The coffee is then dried on African raised beds in a temperature-controlled room, beginning with a slow seven-day drying period at temperatures below 35°C before progressing to the final moisture content of 12%. In the cup, the process enhances rather than masks the natural character of the Gesha variety, bringing forward white florals, bergamot, and juicy peach alongside a refined black tea texture. A long, floral finish completes this vibrant and aromatic coffee.
