
Even Coffee - ALO Chilaka Anaerobic
Tasting notes: Lilac, Strawberry, Beaujolais Nouveau
ALO Chilaka Anaerobic comes from the Chilaka Station in Ethiopia’s Bensa region, located at an impressive 2,320–2,400 metres above sea level. The station was established by Tamiru Tadesse, owner of Alo Coffee, who invested in the project in 2020 to work more closely with local farmers and showcase the potential of coffee from this high-elevation area. For this lot, ripe 74158 cherries are carefully selected before undergoing a 72-hour anaerobic fermentation in sealed blue plastic tanks in a cool environment.
Following fermentation, the cherries are dried on raised African beds for around 28 days, with the beds turned hourly to promote even drying and covered during the hottest part of the day. Once the coffee reaches 10–11% moisture, it is stored in GrainPro bags before resting for at least 45 days prior to dry milling. The result is an aromatic and beautifully balanced cup, opening with the delicate perfume of lilac before moving into fresh strawberry and bright, elegant acidity. A soft sweetness ties everything together, with a subtle wine-like character reminiscent of Beaujolais Nouveau.
