This lot features a blend of Typica and Caturra varieties, highlighting clarity and straightforward character without excessive processing influence. A limited espresso roast is also available, showcasing additional depth and structure.
Candelaria Sarango Santos cultivates coffee on her farm, Tres De Mayo, located in the San Ignacio region of Cajamarca, Peru. With a family background rooted in agriculture, she developed her coffee-growing expertise through generational knowledge and hands-on experience. The result is a carefully produced crop that reflects consistency and quality.
Following selective hand-harvesting, ripe cherries are pulped shortly after picking and undergo a brief fermentation in open containers. The coffee is then fully washed and dried on raised African beds for approximately 15 to 20 days, ensuring even drying and clarity in the final cup.
