This vibrant Pink Bourbon coffee from Wilson Alba’s Sierra Morena farm in Palestina, Huila, Colombia, is processed using a double fermented washed method. The coffee undergoes two stages of anaerobic fermentation—48 hours in cherry and another 48 hours in mucilage—before being washed and dried, resulting in a complex and layered cup with bright tropical fruit notes of pineapple, lychee, and sweetness of brown sugar.
