Yellow Pacas varietal is still unknown and only available from Fincas Mierisch for just a few amount. Since 2024, we have been honored to roast and offer this coffee as their long term partner. When we tried the washed lot of this coffee in 2024, we thought natural process might go even better on this cultivar and it indeed went well on the robust flavors of Yellow Pacas varietal.Degassing: we recommend degassing this coffee unopened for at least 45days. Best from 60days to 90days post roast.
