Près de 400 agriculteurs locaux cultivent le café à certaines des plus hautes altitudes du monde et livrent leur récolte à une toute nouvelle station de lavage, construite il y a seulement quelques années.\u003cbr\u003e\u003cbr\u003eÀ la station, les cerises sont soigneusement dépulpées, fermentées pendant 48 heures, rincées à l'eau douce et étendues sur des lits surélevés pour sécher. C'est un processus simple mais précis qui fait ressortir des notes fruitées et florales pétillantes, superposées à une structure classique de thé noir. Ce style lavé contraste magnifiquement avec les cafés naturels plus parfumés de la même région, offrant une tasse nette, propre et pleine de caractère.\u003cbr\u003e\u003cbr\u003eCe qui rend cela encore plus excitant, c'est l'avenir.
