Produced by Karin De La Rosa at the Mount Totumas cloud forest reserve, this Yellow Catuai uses the Milkyway process. This involves a 48-hour spring water soak followed by 24 hours of sealed fermentation, resulting in a clean, high-altitude cup with sweet notes of apple and peach.
